Chicken Salad That Isn’t Boring (Thai-Inspired)
20 mins prepServes 4
This super simple, healthy, high-protein, and prepable seared chicken salad is a zingy, punchy Thai-inspired dish packed with fresh herbs. It's light, citrusy, herby, and funky – just really tasty stuff.
First, prepare the dressing: Combine all dressing ingredients (red Thai bird chiles, red bell pepper, garlic, Asian fish sauce, light brown sugar, distilled white vinegar, fresh lime juice) and stir well.
1. Slice your chicken breasts in half lengthwise if they are thick, and season generously with salt.
2. Bring a pan to medium-high heat, add in 1 tablespoon of oil, and sear the chicken for 2-3 minutes on each side or until browned and cooked through. Remove from the pan and let rest.
3. Chop your cooked chicken, cabbage, bell pepper, scallions, and herbs.
4. Add all chopped ingredients to a bowl and slowly add the prepared dressing while stirring until it’s tasty. You will likely have leftover dressing. Adjust salt and acid if needed.
