This Cilantro & Lime Brothy Rice is super tasty and is one of my favorite ways to throw together a quick weeknight meal. It comes together in just a few minutes thanks to @minutericeus Cilantro & Lime Jasmine Rice Cups.
Add the chicken broth to a large pot and set it over medium heat to bring it to a boil. Mince the garlic and dice the onion, reserving a small amount of the onion for garnish, and add the remaining garlic and onion to the pot. Once the broth reaches a simmer, reduce the heat to low and let it cook for about 15 minutes.
While the broth simmers, heat a large skillet over medium-high heat and generously season the pork loin chops with salt. Add the oil to the skillet and sear the pork for 3–4 minutes on each side, or until fully cooked through.
Prepare the Minute Cilantro & Lime Jasmine Rice Cups according to the package instructions, halve the cherry tomatoes, and mince the cilantro.
To assemble the bowls, start with a layer of rice, followed by the infused broth. Add the cherry tomatoes, corn, reserved onion, and sliced pork chops. Finish with a sprinkle of cilantro and a squeeze of fresh lime juice. Enjoy!
