Crispy Microwave Potatoes

1. Peel and cut potatoes into 1-inch cubes.
2. Add 5 oz water to Magic Pot, insert steamer, add potatoes, and microwave on high for 5 minutes.
3. Check for tenderness with a fork, and continue microwaving in 60 second intervals as needed.
4. Drain and dry both the potatoes and the Magic Pot.
5. Add potatoes back to the Magic Pot, coat with 2 tbsp oil, and shake to cover. Break up the potatoes a little to create more edges for crisping.
6. Add more oil to submerge potatoes halfway. Microwave on high for 4 minutes.
7. Stir and microwave in 1-minute intervals until crispy.
8. Optional: garnish with fresh herbs or garlic
