Everything Bagel Crusted Salmon Black Rice Bowl

Cook 2 cups of Lundberg Organic Short Grain Black Rice with 3½ cups water or stock according to package instructions. While that cooks, whisk together 2 tbsp honey and ¼ cup olive oil and brush all your salmon. Sprinkle generously with everything bagel seasoning, making sure to coat the sides too. Spray an air fryer basket with cooking oil and cook the salmon at 350°F for 5–8 minutes, or until cooked through and the seasoning is crispy. Keep an eye on it so the seasoning doesn’t burn. Meanwhile, roughly chop 1 large bunch of parsley (remove any twiggy stems) and toss with thinly sliced red onion, capers, the lemon zest & juice, 1 tbsp olive oil, and salt and pepper to taste. Serve the salmon and salad over the black rice.
