Herby CousCous Salad with Lemon-Parsley Vinaigrette
20 mins prepServes 5
A super simple, healthy, and prep-able marinated salad featuring vibrant citrusy, herby, and veggie-packed couscous, dressed with a zesty lemon-parsley vinaigrette. It can also be enhanced with shredded chicken for added protein.
1. **Prepare the Lemon-Parsley Vinaigrette:** Add 1 large bunch parsley, 1 garlic clove, 1 tsp dijon mustard, 2/3 cup olive oil, 1/4 cup lemon juice, 1 tsp honey, and salt & pepper to taste into a blender and blend until smooth. If you don’t have a blender, finely chop the parsley and grate/finely chop the garlic. Combine all vinaigrette ingredients except parsley, whisk until combined, then fold in the parsley.
2. **Prepare the Couscous:** Cook 1.5 cups of raw couscous according to package directions.
3. **Prepare Salad Ingredients:** Finely chop 1/8th red onion, halve 1/2 large cucumber, chop 1/2 large bunch kale, and halve 1/2 lb cherry tomatoes.
4. **Assemble the Salad:** In a large bowl, combine the cooked couscous, chopped red onion, cucumber, kale, cherry tomatoes, and 4 oz Mozzarella Cheese. Add additional salt, pepper, and acid to taste.
5. **Dress the Salad:** Slowly add the prepared Lemon-Parsley Vinaigrette to the salad, tossing until dressed to your liking. Taste and adjust for salt and acid as needed.
